We have received a lot of requests for this one – and I mean a LOT! Yes, they’re finally here – Macarons!
Join us at Mr Baker’s Cake School as we welcome special guest tutor Gaye Perry of The Real Macaron Company, for an in-depth introduction to one of the most notoriously tricky bakes.
This face-to-face class is on Sunday 16th August, from 2pm – 5pm. Please note classes may sometimes run over, so do consider this when making travel arrangements.

Macarons are often seen as one of the most challenging bakes to master – with their delicate shells, precise technique and the all-important macaronage process. It is easy to see why so many bakers feel intimidated… but with the right guidance, they are absolutely achievable!
In this class, Gaye will demystify the process, breaking everything down into clear, manageable steps and sharing the tips and techniques needed to achieve consistent, reliable results.
This class is suitable for both beginners and more experienced bakers who would like to refine their technique and build confidence with this iconic bake.
In this face-to-face baking class, you will learn:
– How to prepare and pipe macaron shells with the correct consistency.
– How to master the technique of macaronage.
– How to recognise the correct batter texture and avoid common pitfalls.
– How to bake macarons to achieve smooth tops and characteristic “feet”.
– How to pair your shells with complementary fillings.
– How to troubleshoot common macaron issues.
– How to recreate these at home with confidence.
During the class you will receive a handy instruction pack, including all of the recipes you will need to recreate your macarons again at home and, of course, you will get to take a small batch of your finished macarons home as well! Whether you choose to share them with anyone is up to you…
The class will be held at my dedicated Cooking, Baking and Cake Decorating Academy in the picturesque town of Fareham, Hampshire, conveniently located between Southampton and Portsmouth. Limited parking is available on site however, this will be offered on a first come first served basis.
You will be able to ask questions throughout the class, so you may wish to bring a notepad and pen with you to take notes.

Mr Baker’s Cake School is located in the Kiln Acre Business Centre in the town of Fareham, close to the M27 motorway. If driving to your class, exit at junction 11 towards Fareham Central. At the roundabout, take the exit onto the A27 towards Fareham before bearing left towards Portchester, Wickham and Fareham Town Centre. At the Delme Roundabout, take the 4th exit onto Wallington Way before crossing the roundabout (first exit) outside Sainsbury’s. At the Wickham Road Roundabout, take the 3rd exit onto Wickham Road and the Kiln Acre Business Centre will be on your left in around 500yds.
